Old Stone Oven - Pizza Stone is rated #1!

Great pizza crust starts with a good recipe but ends with a great pizza stone.  A great pizza crust is created at a high heat (as high as you can turn up your oven) we use a 550 degree oven.  Brick oven pizza normally cooks at approx. 716 degrees.  It is necessary for your stone to be at oven temperature and the thicker the stone the better as it retains heat and will do a better job. 

Many people do not know what a Pizza Peel is.  A Pizza Peel is essential when using a Pizza Stone.  The purpose of the Pizza Peel is to move the pizza from the counter to the oven and back, since the stone is in the oven at 550 degrees.  We teach this in our Gourmet Pizza Class, and hope to see you in our next class.

Toppings are also important, we suggest trying many recipes and playing with the recipes until it is just what you want.  I have found that good ingredients are essential in getting the right flavor.  Spend a few extra dollars if you need to, and you will be very glad that you did!
