1 1/2 cup sifted flour
1 cup sugar
1 tsp baking powder
1 tsp soda
1/4 tsp cinnamon
1/4 tsp salt
2/3 cup cooking oil
2 eggs
1 tsp vanilla
1 cup finely shredded carrots
1/2 cup finely shredded coconut
3/4 cup finely cut up figs
Place dry ingredients in mixing bowl; add cooking oil, eggs, and vanilla
beat 2 minutes until well blended. Add carrots, cocnut, and figs.
Bake in greased and floured bundt pan at 360 degrees for 40-45 minutes
or until cake tests done. Cool in oan for 10-15 minutes then turn over onto
cooling rack or serving plate to complete cooling. Top with vanilla or lemon glaze.
(Can also be baked in 12 cup Bundt pan)
